Try These Mouthwatering Bhindi (Okra) Recipes with Roti or Rice

The most loved and enjoyed vegetable in summer is Okra or lady finger. Today we will tell about some delicious and easy to make Okra recipes that you can enjoy with roti or dal rice. So let’s start;

The most loved and enjoyed vegetable in summer is Okra or lady finger. Today we will tell about some delicious and easy to make Okra recipes that you can enjoy with roti or dal rice. And if you love gardening then you can grow Okra at your home garden with few tips and tricks. 

Bhindi (Okra) Masala -

This is the typical okra recipe, which is loved by most of the Indians. Lets know how to make semi-dry Bhindi (Okra) Masala.  

Steps to make Bhindi Masala 

  • Rinse 250g of Bhindi (Okra) using a strainer. Serve them on a plate and let it dry. You can even use a kitchen towel, to dry up the bhindi. 

  • Chop the bhindi in 2-to-3-inch pieces.

  • Take a heavy pan, pour 2 tablespoons of oil and add chopped okra into it. Sauté the chopped bhindi on a medium-low-heat, until they are tender and cooked.

  • Now, take out the chopped bhindi on a plate and chop Onions, Tomatoes, Green chilies, Crush ginger & Garlic.  

  • Take the same pan and heat 1 tablespoon of oil and add the chopped onion into it. Sauté the chopped onion on a low heat, until they become translucent. 

  • Then, add one tablespoon of crushed ginger & garlic and chopped green chilies. And, when the raw aroma of ginger & garlic goes away, add chopped tomatoes. 

  • Sauté the tomatoes, on a low-medium-heat, and if the pan starts sticking or getting dry, splash the 3-4 spoons of water into it and mix well until they become soft. 

  • Time to add some spices into our Bhindi Masala. 

  • Add ½ teaspoon of kashmiri red chilli powder, ½ teaspoon of turmeric powder, ½ teaspoon of garam masala powder, ½ teaspoon of fennel powder, ½ teaspoon dry mango powder and 1 teaspoon coriander powder. Mix all the spices well on a low medium heat.  

  • Add the sautéed bhindi into our masala and season it with salt as per the taste. 

  • Now stir the whole mixture well and cook for about 2 – 3 minutes and sprinkle the chopped coriander leaves to enhance the flavor. 

  • Serve it hot with Phulka or Roti.  

Bharwa Bhindi –

This is another yummy Okra dish. Lets know how to make Bharwa Bhindi. 

  • Rinse 250g of bhindi using a strainer, use a kitchen towel to dry up the bhindi and slice the crown & base part of each bhindi. Give a slit on each bhindi using a knife.

Steps to make the stuffing/ masala 

  • Take all the Dry masala powders in a bowl including: 1 teaspoon of Kashmiri red chili powder, 1 tablespoon of coriander powder, ½ teaspoon of cumin powder, ½ teaspoon of turmeric powder, ½ tablespoon of dry mango powder, ½ teaspoon of fennel powder and ½ teaspoon of salt. 

  • Mix all the spices well and stuff it into the bhindi one by one with the help of a spoon or you can use your fingers as well. 

  • Take a heavy pan and pour 2-3 tablespoon of oil in it. Heat the oil in a low medium flame and add asafoetida and stir it.  

  • After this, immediately add the stuffed bhindi into the pan and gently mix & stir it. Arrange the separately, it should not be on top of each other and should be evenly cooked. 

  • The whole process of cooking a Bharwa Bhindi should be in a low medium flame and give it a gentle stir in between every 4-5 minutes.  

  • Now stir the whole mixture well and until the bhindi is cooked and sprinkle the chopped coriander leaves to enhance the flavor. 

  • Serve it hot with Roti, Dal rice, yogurt or raita.
