Meethi Sewai

An Eid specialty, sweet vermicelli or meethi sewai is a quick dessert that is mainly made on festivals & other occasions.  However, this sevai recipe is such that you would not hesitate to make on other days as well.

Ingredients of Meethi Sewai Recipe

  • 1/2 Cup Pistas

  • 1/2 Cup Almonds

  • 1 packet Vermicelli

  • Desi ghee

  • 1 Cup Milk

  • 1 Cup Sugar syrup

  • A pinch of Cardamom powder

  • A pinch of Saffron

  • Handful of Khoya

How to Make Sewai

  • Blanch almonds & pistas in water for few hours. Once done, peel off their skins and cut them finely.

  • Now cook the vermicelli in desi ghee till it turns brown. Now put it in a strainer so that all excess oil comes out.

  • Empty the pan and add milk to it.

  • Once the milk starts boiling add sugar or sugar syrup to it.

  • Then add sewai and blend gently. Be careful not to break it.

  • Add saffron & cardamom powder.

  • Now put almods & pistas and some khoya to it. Mix everything well.

  • Once the milk is well absorbed, dry roast for a few minutes.

Shahi tukda is a famous Hyderabadi dessert or dish that is very easy to prepare. In fact it is perfect to enjoy with friends or family during Eid. Here is how you can make this delicious dessert.

Ingredients of Shahi Tukda

  • Oil for deep frying

  • White bread slices

  • 1/4 cup cashews

  • 1/4 cup sliced almonds

  • 2 tablespoons pistachio nuts

  • whole milk

  • evaporated milk

  • white sugar

  • 1 teaspoon ground cardamom

  • 1 pinch saffron

How to make Shahi Tukda

  • Heat oil in a saucepan or kadhai.

  • Fry bread slices in the hot oil until it turns golden brown.

  • Drain on a bowl lined with paper towels.

  • Fry cashews, almonds & pistachio nuts in oil. Chop finely when it cools down.

  • Boil milk in a heavy-bottomed pan over medium heat and continue boiling till it reduces by about half.

  • Put evaporated milk into pan & add sugar, saffron and cardamom; boil for 5 to 10 minutes.

  • Remove from heat & let it cool completely.

  • Set the fried bread pieces in a shallow bowl big enough to allow them to be laid in a single layer.

  • Pour milk mixture evenly over the bread. Spread out the chopped nuts over the bread.

  • Now chill it in refrigerator for 1 to 2 hours.

Kesar phirni is another lip-smacking dessert that can be made within minutes. Here is the simplest way to make this great dish.

Ingredients of Kesar phirni

  • 1 litre milk

  • 1 cup sugar

  • Rose water

  • Saffron strands

  • 75 gm rice flour

  • 50 gm soaked basmati rice

  • Powdered green cardamom

  • Chopped pistachios

  • Chopped almonds

How to make Kesar Phirni

  • Bring the milk to a boil.

  • Reduce the heat & let it simmer until the quantity reduces to half.

  • Grind soaked rice to a coarse paste.

  • Add little milk to it & mix to make it little thinner.

  • Add sugar to the remaining milk & keep boiling.

  • Add rice paste in hot milk & stir continuously.

  • Next add cardamom powder, rose water and set aside in small pot.

  • Chill in refrigerator for around 3 to 4 hours.

  • Serve after garnishing it with almonds, pistachios.
